Lemon Blueberry Weetbix Slice

A delightful treat made with Australia’s favourite Weetbix. The crunchy Weetbix base pairs perfectly with the zesty lemon icing and juicy blueberries, creating a slice that’s both refreshing and satisfying. Perfect for a midday snack or a light dessert, this recipe brings together classic Australian ingredients for a deliciously wholesome treat.

Ingredients

  • 185g Fairy margarine, chopped, extra for greasing
  • 2/3 cup caster sugar
  • ¼ cup honey
  • Grated zest of 1 lemon
  • 6 Weetbix, crushed
  • 1 cup desiccated coconut
  • 1 cup plain flour
  • 1/2 teaspoon baking powder
  • 125g punnet blueberries

Lemon drizzle

  • 1 cup icing sugar mixture, sifted
  • 1 tbsp lemon juice

Method

  1. Preheat oven to 200C/180C fan forced. Grease and line a 28cm x 20cm rectangular slice pan with baking paper on both sides.
  2. Combine Fairy, sugar and honey in a saucepan over a medium heat until melted.
  3. Place zest, Weetbix, coconut, sifted flour and baking powder in a large mixing bowl. Stir to combine. Add melted Fairy mixture and stir until combined. Stir in blueberries.
  4. Press into base of pan and smooth surface with the back of a spoon.
  5. Bake for 30-35 minutes or until lightly golden and set. Cool completely in pan.

Lemon drizzle

  1. Combine icing sugar and juice in a bowl and stir until smooth and runny. Lift slice out of pan. Drizzle the icing over the top off the end of a spoon. Allow to set. Cut into bars or squares to serve.

TIP: store slice in an airtight container in a cool place or fridge for 1 week.
